Tasting profile
Dark cherry, stewed plum, licorice, graphite, garrigue, cocoa, balsamic nuances. Matured leather, dried herbs, and earthy minerality. Still vibrant with chewy mouthfeel.
Evolution: Primary fruit softened, replaced by tertiary earth, balsam, and dried fruit. Cedary spice and minerality intensified with bottle age.
At peak: Fully developed; will gradually lose fruit after 2030 but retain savory depth and mineral core.

Cims de Porrera Classic is crafted from extremely old-vine Carignan and Garnacha (some 70–100+ years), grown on Priorat's slate ('llicorella') soils, and designed for decades of cellaring. 1999 was a solid classic vintage, giving extra backbone and clarity. The wine's structure, acidity, and concentration ensure excellent evolution over 25-30+ years, matching top expectations for ageworthy Priorat.
Food pairing
Grilled or slow-braised lamb, game (venison, wild boar), Iberian pork, oxtail, mature Manchego or blue cheeses, lentil and mushroom stews, charred vegetables, and Catalan cuisine (e.g., botifarra, escalivada).

Sustainability
Sustainability score: 7/10
Hand-harvesting from historic old vines (many over 80 years old), minimal intervention winemaking, dry-farming (no irrigation), low-yield sustainable viticulture. Traditional bush vines reduce chemical dependence. Limited use of synthetic treatments. Some recycling of production materials and local employment.
While the producer was not certified organic or biodynamic in 1999, Cims de Porrera employs many sustainable and traditional vineyard practices: dry-farming, manual work, minimal inputs, and preservation of historic vines ensure a low-impact, biodiversity-friendly approach. Carbon footprint is moderate due to glass bottle weight and international demand, but production scale is small and environmentally sensitive compared to industrial operations. Overall, the wine ranks above average for sustainability among fine Priorats of its era.
