Tasting profile
Golden color, persistent mousse. Aromas of baked apple, citrus marmalade, toasted almond, brioche, wildflower honey. Palate is creamy yet bright, with lingering mineral and saline finish.
Evolution: Primary fruit replaced by honeyed, nutty, and biscuity notes. Acidity softening but present. Fine perlage persists if well stored.
At peak: Peak complexity between 2016-2020; post-2024 profile is increasingly gourmand and tertiary

As a vintage Trentodoc of extended lees aging, the 2006 Ferrari Perlé entered its peak window after 8-10 years, exhibiting optimal interplay of fruit, autolysis (toasty/brioche), and minerality. Post-15 years, tertiary flavors dominate and freshness can wane except in perfectly cellared bottles.

Sustainability
Sustainability score: 8/10
Ferrari is a leader in integrated pest management, biodiversity conservation, energy use (majority renewable sources), rainwater management, reduction of chemical inputs, and lightweight packaging with extensive bottle recycling policies.
Ferrari Trento is widely recognized for progressive sustainability, pioneering biodiversity (beehives, cover crops, bird habitats), significant reduction of vineyard chemicals, and limiting carbon emissions. They joined international wine sustainability accords and Trentino was among Italy’s first sustainability-certified sparkling regions. 2006 vintage predates some current certifications but practices were advanced for the time. Not fully organic/biodynamic, so score is not a perfect 10, but Ferrari’s sustainability is considered outstanding among major producers.
