Tasting profile
Evolved aromas of dried red cherry, wild strawberry, sous-bois, rose petal, and crushed leaves. Hints of spice, tea leaf, truffle, and subtle minerality. Palate is refined, elegant, with graceful length and silky texture.
Evolution: Fruit notes will continue to recede, yielding more earth, spice, and truffle. Tannins become increasingly velvety, structure softens, but acidity keeps wine lively if well stored.
At peak: Graceful tertiary character, haunting perfume, seamless palate integration—archetypal aged Volnay from outstanding terroir and traditional producer.

Burgundy from top 1er Cru sites and producers like Lafarge, especially from classically balanced vintages (2008), has outstanding longevity. The structure, balance, and minimal intervention style mean the wine is drinking at or near peak, but will hold and evolve gracefully for another decade, especially in quality storage. Many 2008s are still opening beautifully; don’t rush, but don’t wait indefinitely.
Food pairing
Roast duck with cherry sauce, wild mushroom risotto, herb-crusted rack of lamb, pigeon, roast quail, or refined hard cheeses (Comté, aged Gruyère). Avoid spicy/hot foods; best with earthy, delicate, or savory fare.

Sustainability
Sustainability score: 9/10
Domaine Michel Lafarge is a pioneer of biodynamic farming in Burgundy: zero synthetic chemicals/herbicides, minimal sulfur, use of plant-based treatments and biodynamic preparations, horse-plowed vineyards, hand-harvesting, no irrigation. Winery powered by renewable energy where possible, lightweight glass, cork from managed forests.
Lafarge is among Burgundy’s leading practitioners in sustainability—both organic and certified biodynamic since the late 1990s. Their vineyard management promotes biodiversity, soils are alive, cover crops seeded, and all work is by hand or horse. Minimal intervention in winemaking, responsible packaging, and traditional, long-lived cork closure all raise their rating. The biggest carbon cost is shipping to global markets; locally consumed wines have a very modest footprint compared to peers.
