This wine is made from old-vine Albillo planted in very old bush vineyards, fermented and matured in oak with minimal intervention. Its structure, acidity, and extract allow it to age exceptionally well for a white wine from Spain, peaking between 5-11 years post-vintage but able to develop additional tertiary notes beyond a decade.
Food pairing
Roast poultry, monkfish, turbot, richly sauced white fish, Jamón Ibérico, manchego, wild mushroom dishes, caviar, or subtle herbed vegetarian cuisine.

Sustainability
Sustainability score: 9/10
Dry-farmed old-vine bush vineyards; organic viticulture; biodynamic treatments; native cover crops; hand harvesting; gravity-flow winery; minimal intervention winemaking; recycled materials in packaging; reuse and recycling of water in production
Dominio del Águila is a sustainability flagship in Ribera del Duero, with a certified organic estate and meaningful application of biodynamic practices. They promote biodiversity by maintaining wild flora and using traditional bush-trained, non-irrigated vines. Hand harvesting, gravity-flow processing, and natural fermentations lower energy needs. The winery's packaging is eco-conscious, using recycled/recyclable materials. While carbon output rises for exports, the short agricultural-to-bottle chain and eschewing of mechanization make this one of Spain's most environmentally responsible premium producers.
