Tasting profile
Expressive aromas of wild strawberry, black cherry, and red currant underpinned by rose petal, forest floor, Asian spice, and subtle oak. Palate is silken, airy, with a persistent mineral core, vibrant red fruit, and complex mushroom, sous bois, and truffle notes. Tannins fully resolved, acidity bright.
Evolution: Primary fruit in youth (2010-2016) gave way to complex spice, floral, and tertiary notes. From 2018+, wine shows detailed layering, impressive texture, and aromatic nuance.
At peak: At peak now through late 2020s; may hold on further with graceful tertiary evolution until ~2032, but primary fruit will recede.

Top Vosne-Romanée 1er Crux from Cathiard age for 20-25 years in fine vintages. The 2008 is classic, with high acidity providing longevity. Drinking window is extended due to the wine's finesse, structure, and multidimensional complexity, consistent with critics and collector observations. 2008 is an underappreciated vintage delivering superb elegance in recent tastings.
Food pairing
Ideal with duck breast with cherry sauce, roasted quail, wild mushroom risotto, veal with truffle, or roast pork loin. Umami-driven dishes (soy-glazed eggplant, matsutake mushrooms) pair beautifully as well.

Sustainability
Sustainability score: 6/10
Domaine Sylvain Cathiard practices lutte raisonnée (reasoned struggle), focusing on minimal chemical intervention and manual vineyard management, but does not seek formal certification. Vineyard work is traditional and meticulous, prioritizing biodiversity and soil health; some small-scale experimentation with organic treatments.
While not certified sustainable or organic, the domaine’s hands-on viticulture, absence of chemical fertilizers/pesticides where possible, and small-batch production limit direct environmental impact. However, practices are not as advanced as certified organic or biodynamic peers, and international demand means a moderate overall carbon footprint (especially for air-freighted bottles). Sustainability is above average for the region, though not in the vanguard of environmental innovation.
