Winston Churchill is always released with extended lees aging (around 10 years), needing additional time in bottle to bloom. The 2015 vintage is structurally dense due to the warm, healthy year, granting both concentration and bright acidity. Its best expression arrives after at least 12-15 years cellaring, achieving an unrivaled blend of freshness, richness, and complexity.

Sustainability
Sustainability score: 6/10
Integrated pest management, reduced chemical inputs, cover cropping, biodiversity projects, energy-efficient winery (solar panels), rainwater recovery, all packaging recyclable, lighter bottles as of 2022 (not yet 2015).
Pol Roger is a leader in eco-innovation within Champagne but not fully organic or biodynamic, reflecting a pragmatic approach to sustainability. Their certifications show a strong move to reduced impact and responsible viticulture, with energy/water savings and packaging improvements. Global distribution (notably to the US, Asia, Australia) drives up the wine’s carbon footprint, and historically heavy Champagne bottles are only recently being addressed. While strides are significant—especially with nature-respecting vineyard management—a full transition to organic/biodynamic would further raise their sustainability score.
