Tasting profile
Notes of baked apple, pear, toasted oak, hazelnut, vanilla, with hints of citrus and a round, creamy texture. Aged bottles will show more honeyed and nutty tertiary tones.
Evolution: Fruit intensity will continue to diminish; nutty, oxidative, and butterscotch notes will dominate.
At peak: At optimal cellaring, this wine shows balance of fruit, oak, and mineral; past peak, expect more secondary and tertiary flavors.

- Current status
- Late maturity; the wine is at or just past its peak but can still show well if well cellared.
- Current condition
- Mature, with developed secondary flavors, but can still be enjoyed if properly stored.
Ontario barrel-fermented Chardonnays are best within 5–7 years of vintage due to moderate acidity and careful balance of oak and fruit. The 2016 is now fully mature, showing character and complexity, but further cellaring is unlikely to improve quality.
