Tasting profile
Golden to deep yellow hue. Aromas of acacia honey, roasted hazelnut, dried yellow fruits, marzipan, truffle, and complex reduction. Palate combines creamy texture with vibrant acidity and mineral finish. Saline, layered, and persistent.
Evolution: Primary citrus and floral notes have evolved into honeyed, nutty, and earthy complexity. Texture has become more unctuous, tertiary aromatics dominate.
At peak: Expected at or just beyond peak, offering extraordinary depth and complexity if well-preserved. Top examples will show grand cru depth; others may trend softer or oxidative.
Structure
- Acidity
- High – acidity has preserved freshness and vibrancy over decades
- Tannins
- None (white wine, structure from acidity/oak)
- Alcohol
- Approximately 13% ABV
- Aging potential
- 25-35 years in top storage; some bottles may last beyond but risk of oxidation rises. 1995 Leflaive Les Pucelles remains benchmark for longevity in white Burgundy.
Drinking window
- Peak drinking
- 2008 to 2032
- Optimal window
- 2001 to 2035
- Current status
- Mature, at peak, with continued potential for further aging with proper provenance
- Current condition
- Shows deep tertiary complexity. Top bottles well stored are holding strong, but minor risk of oxidative notes (natural with age for old white Burgundy). 1995 is a robust vintage, but white Burgundies over 25 years require careful inspection.
White Burgundy from top producers and premier cru vineyards in strong vintages (1995) can last 25-35 years. Domaine Leflaive uses meticulous farming and cellar practices that promote longevity, and Les Pucelles is among Puligny’s finest soils for age-worthy Chardonnay. However, white Burgundy is susceptible to premature oxidation, especially from 1990s vintages, so condition is crucial. Most well-stored bottles are now at their absolute apex.
Food pairing
Lobster or langoustines in beurre blanc, seared scallop with truffle cream, poached turbot, roast Bresse chicken, mature Comté or aged Gruyère cheeses.
Serving
- Serving temperature
- 12-14°C / 54-57°F
- Decant
- Yes (20-30 minutes in gentle, wide-bottomed decanter) — Allows reduction and layered complexity to unfold; older white Burgundy can be slightly closed on opening. Avoid prolonged exposure due to fragility.
Sustainability
Sustainability score: 8/10
Vineyards fully converted to biodynamic farming from 1997 with organic transition prior to this. No synthetic herbicides, fungicides or pesticides. Emphasis on soil health, cover cropping, and biodiversity. Hand-harvested, gravity flow winery, natural yeast fermentations, low-intervention winemaking. Progressive energy and water conservation policies in cellar.
Domaine Leflaive is one of Burgundy's absolute leaders in sustainable, organic, and biodynamic viticulture, credited with pioneering biodynamics in the Côte d'Or. The estate's rigorous vineyard practices, biodiversity focus, and low-intervention winemaking reinforce a strong sustainability profile. Transportation emissions are typical for French fine wine but partially offset by responsible production. Their ongoing environmental stewardship earns them an 8/10 score, among the highest in Burgundy.
