Tasting profile
Complex and powerful with layered notes of white peach, citrus blossom, ripe nectarine, grilled hazelnut, oatmeal, and subtle flinty reduction. Judicious new French oak presenting as nougatine, cashew, spice, and creamy texture.
Evolution: Develops further richness, honeyed wax, roasted nuts, and more profound mineral depth over 5-10 years. Tertiary notes of brioche, baked lemon, and subtle truffle may emerge.
At peak: Peak will show perfect harmony of vibrancy, refined minerality, and mature Chardonnay complexity: toasted nuts, stone fruit preserves, zabaglione, and a core of saline freshness.

Yattarna is Penfolds' flagship Chardonnay and among the best New World Chardonnays for aging. Its high-pedigree fruit (multi-region, cool-climate sources like Tasmania, Tumbarumba, Adelaide Hills), high acidity from early-picked fruit, and slow, high-quality oak maturation ensure longevity and graceful development. 2016 was a high-quality vintage for South Australian Chardonnay: excellent fruit purity, tension, and drive. Extended drinking window of 15+ years is realistic; tertiary evolution is prized in older bottles.
Food pairing
Ideal with rich seafood (lobster, scallops with beurre blanc), roasted chicken, pork tenderloin, veal in cream sauce, roasted cauliflower, or aged Comté. Excellent with truffle risotto or dishes with mushroom cream.
Serving

- 11-13°C / 52-55°F

- Yes (30-40 minutes) — To air off reduction and bring out layered aromatics; bottle-aged top Chardonnay can show some initial matchstick that resolves with brief oxygen exposure.
Sustainability
Sustainability score: 7/10
Penfolds Yattarna is produced with integrated pest management, minimal herbicide/fungicide use, and water-saving initiatives. Vineyard growers supplying fruit employ soil health programs and biodiversity preservation. Improvements in lightweight glass and recyclable packaging in recent releases.
Penfolds is a leader in Australian sustainability standards, actively involved in Sustainable Winemaking Australia and large-scale environmental initiatives. Yattarna sources from some of the coolest, most sustainably managed vineyards in Tasmania, Tumbarumba, and Adelaide Hills—regions noted for progressive environmental stewardship. Energy and water management at Penfolds’ facilities are advanced, but large-scale international distribution raises the overall carbon footprint. No organic or biodynamic certification for Yattarna, but comprehensive sustainable farming and resource management practices are implemented. Overall, above average for a large international wine brand.
