Tasting profile
Ripe red cherry, wild raspberry, violets, peony, subtle clove, and freshly turned earth. Texture is taught but opening, with polished tannins.
Evolution: Fruit will move from red berry to dried floral and sous-bois (forest floor) over time, tannins will soften, tertiary complexity (leather, spice, mushroom) will emerge.
At peak: Exquisite core fruit, silky texture, layered florality, and mineral vibrancy at peak maturity (2025–2032), with great finesse and length.

2017 was an elegantly structured, classic vintage in Volnay. The Fremiet vineyard typically produces fine, aromatic, and mineral-driven wines that benefit from 6–10 years of age, developing depth and silkiness without losing their natural freshness. This window best balances fruit purity and mature complexity.
Food pairing
Roast chicken with morel mushrooms, duck breast with cherry glaze, grilled lamb cutlets, mushroom risotto, Comté or Brie de Meaux cheese, roasted root vegetables.
Serving
- Serving temperature

- Decant
- Yes (30–45 minutes) — Young Pinot Noir from top Burgundy sites can be initially reticent; brief decanting opens aromatics and softens structure.
Sustainability
Sustainability score: 8/10
Domaine Marquis d'Angerville is certified organic; they avoid all systemic chemicals (herbicides, fungicides, pesticides) and use cover crops, compost, and careful soil management to promote biodiversity. Vineyards mostly plowed by horse, minimizing compaction/fuel use. They have initiated water conservation programs and have reduced their use of synthetic materials in packaging (favoring lighter glass bottles).
D'Angerville is a sustainability leader in the Côte de Beaune: 100% organic farming (certified since 2009), minimal interventions and a careful transition to biodynamic practices. They focus on ecosystem health, soil vitality, and manual labor over mechanization. While international export is standard for Burgundy and adds transport emissions, within the region they are among the most environmentally proactive, making this a model for sustainable premium wine production.
