Tasting profile
Subtle notes of wild strawberry, red currant, watermelon, citrus zest. Some floral aspects (rose petal), with soft minerality. With age, primary fruit fades, more delicate and less vibrant.
Evolution: Was lively and fruit-forward in first 2 years; now shifting toward mellow, subtle, possibly faintly spicy/earthier notes. Acidity may soften.
At peak: At its best within 12-18 months of release (mid-2020 to early 2021): vibrant red fruit, freshness, refreshing finish.

- Current condition
- Past peak for freshness but could still drink pleasantly if well stored. Some aromatic fading likely; best consumed soon.
As is typical for high-quality, dry Ontario rosé, peak enjoyment occurs within the first 2 years post-vintage, with focus on bright aromatics and freshness. By 2024, most bottles will show diminished fruit and less lively palate, though may still be pleasant for those enjoying softer, subtle profiles.
Food pairing
Ideal with summer salads, fresh goat cheese, shrimp ceviche, grilled chicken, cold pasta salads, charcuterie, and mild soft cheeses. Pairs well with Ontario summer produce.
