- Optimal window
- 2022 to 2030
- Current status
- Ready now - drinking well with some cellaring potential
- Current condition
- Fresh, vibrant with good weight and developing complexity
The 2020 vintage’s favorable weather in Karst gave Vitovska good acidity and balanced ripeness. Early drinking will show fresh citrus and mineral components; over 3-5 years, the wine integrates subtle oxidative notes and texture improves. Past 8-10 years, aromatics may decline in vibrancy leading to gradual fade.
Food pairing
Pairs excellently with shellfish (oysters, clams), grilled white fish, light pasta dishes with olive oil, and Prosciutto di San Daniele. As it ages, it complements richer seafood risottos and mushroom dishes.
