Tasting profile
Pronounced aromas of wild red berry, raspberry, strawberry, dried herbs, crushed stone, floral and mineral notes. Palate is fresh, medium-bodied, saline, with crunchy acidity and a savory/earthy finish.
Evolution: With age, primary fruit recedes, more umami, earth, dried herb, and sous-bois emerge. Tannins soften, structure remains focused due to high acidity.
At peak: At peak, expect seamless integration of fruit, mineral, and earth; subtle, Burgundian complexity and tension.

This wine is made in a fresh, low-intervention style intended to express site and grape purity. While not intended for decades of aging, Guímaro's careful farming, old-vine material, and the region's cooling Atlantic influence give this cuvée surprising structure and potential longevity — especially from a classic, balanced vintage like 2021. Quality examples can easily show well for 8–10 years, developing savory and stony complexity while preserving freshness.
Food pairing
Ideal with grilled or roast pork, Galician-style octopus (pulpo a la gallega), roast chicken, mushroom risotto, aged Manchego, or chargrilled eggplant. Works beautifully with simple chorizo, cured meats, or tapas-style dishes.
Serving
- Serving temperature

Sustainability
Sustainability score: 9/10
Vineyards farmed by hand on steep, terraced slopes; cover cropping to prevent erosion; biodiversity maintained; traditional, low-impact viticulture; gravity-fed cellar with minimal SO2; focus on recycled and lightweight glass bottles; some solar energy use at winery; bottling on-site to minimize transport.
Guímaro is a leading producer of Ribeira Sacra and champions sustainable, traditional viticulture. They avoid synthetic chemicals, use cover crops, hand-harvest the old, terraced vines (which cannot be mechanically farmed), and ferment with only native yeasts. Packaging is eco-friendly and bottle weights are kept moderate. While shipping to export markets does add some carbon footprint, nearly all farming and winery work is low-impact, manual, and focused on land health. Producer practices place Guímaro among the more sustainable small domaines in Spain; however, the winery is not technically certified organic, so not the absolute maximum on the scale.
