Passobianco is a high-altitude Chardonnay grown on volcanic soils, yielding wines with natural tension, freshness, and minerality. Early years express purity and verve; mid-term cellaring develops tertiary nuances while retaining energy. Longer aging possible, but fruit will slowly recede by decade's end.

Ideal with crudo, fresh shellfish, grilled octopus, simple fish dishes, poultry with lemon and herbs, young goat cheeses.

Sustainability
Sustainability score: 8/10
Manual vineyard work, low-intervention winemaking, native fermentations, minimal SO2; use of lightweight glass and recycled materials for packaging; estate energy partially sourced from renewables; water use monitored and conservation practiced.
Passopisciaro pursues sustainability through organic and low-intervention methods, significant handwork, and attention to resource use. While not certified organic, all vineyard and winery inputs are carefully chosen with the environment in mind. Packaging is consciously light. The estate’s high-altitude location allows minimal chemical intervention and aids biodiversity. The main sustainability drawback is transport to non-EU markets, but vineyard and production footprint is low, making this one of the greener high-quality Sicilian whites.
