Tasting profile
Vibrant, crystalline Chardonnay purity with notes of white blossom, citrus zest, green apple, crushed chalk, almond, and hints of toast. Texture is creamy yet weightless. Minerality and acidity remain vivid.
Evolution: Youthful primary fruit (apple, citrus) transitioning to deeper brioche, hazelnut, honeycomb, and complex chalky minerality. Finesse and persistence improve as tertiary notes develop.
At peak: At peak, expect a laser-like core of Grand Cru chalk and preserved lemon, beautiful tension, fine mousse, finite autolytic (brioche, cream) notes, and exceptional length. True connoisseur’s Champagne for Blanc de Blancs lovers.

The 2010 Fleur de Passion is made from old-vine (massal selection) Cramant Chardonnay, vinified entirely in oak barrels without malolactic fermentation, and aged on lees for extended time. It maintains impressive structure, freshness, and complexity. It is currently entering a perfect maturity phase where fruit and tertiary notes intermingle, but will hold for another 5-10 years given proper storage.
Food pairing
Ideal with oyster trio, scallop carpaccio, king crab, Dover sole, turbot in beurre blanc, poultry in cream sauce, caviar, high-quality sushi, aged Comté, or simply as a meditative aperitif.

Sustainability
Sustainability score: 6/10
Diebolt-Vallois employs lutte raisonnée (reasoned fight/reduced chemical use), practices sustainability by reducing chemical sprays, grass cover between rows, selective hand harvesting, natural yeasts for some cuvées, and cautious use of sulfites. No systematic organic or biodynamic approach.
Diebolt-Vallois demonstrates above-standard Champagne region environmental care, using integrated pest management and low-intervention methods compared to many large Champagne houses. However, the estate is not organically or biodynamically certified. Their vineyard management is mindful, but packaging (heavy glass) and international shipping increase carbon impact. Producer does participate in some water/soil conservation and aims to minimize chemical intervention, but no formal sustainability credentials yet. Continued progress in these areas would boost their score.
