Tasting profile
Intense dark cherry, plum, dried fig and raisins, chocolate, sweet spice, notes of tobacco and leather. Rich, dense, tannic finish with underlying freshness.
Evolution: After 5-8 years: dried fruit, tobacco, cocoa, balsamic complexity, velvet-like tannin. Gaining earth, mushroom, and savory elements.
At peak: At maturity (8-15 years): fully integrated, tertiary notes of leather, cacao, prune, spices; smooth, persistent, harmonious.

Food pairing
Rich braised meats (osso buco, short ribs), aged hard cheeses (Parmigiano-Reggiano), wild game, mushroom risotto, dark chocolate desserts. Avoid delicate dishes – Amarone's intensity demands robust flavors.
Serving
- Serving temperature
- 17-18°C / 63-65°F
- Decant
- Yes (1-2 hours) — Decanting softens tannins, opens aromas, and integrates youthful structure – essential for young Amarone.
Sustainability
Sustainability score: 7/10
Tommasi employs integrated pest management (IPM), reduces synthetic chemical inputs, and promotes biodiversity in vineyards. Use of lightweight glass bottles to minimize packaging impact and ongoing conversion of several vineyards to sustainable practices.
Tommasi Viticoltori is a leader in Valpolicella in responsible farming, but not fully organic or biodynamic. SQNPI guarantees reduced agrochemical use, and their adoption of IPM and select renewable energy in operations is positive. Amarone's production method increases energy use, slightly lowering the sustainability score. Strong focus on local ecosystem health, but not yet certified to highest global standards.
