Vivid red cherry, wild strawberry, rose petal, pomegranate, hints of violet, soft earth, and subtle spice. Fresh, juicy, and energetic.

Evolution: Fruit notes will integrate with earthy undertones, spice, dried herbs, and silky tannins. Acid will preserve freshness through 2028, with tertiary notes emerging around 2025-2027.

At peak: Most expressive balance of fruit, floral aromatics, and evolving complexity at 4-7 years from vintage.

This is Castello di Ama's 'Ama' bottling, made in a fresher, more accessible style than the flagship single-vineyard cuvées or Riserva. High natural acidity and quality of winemaking mean it overdelivers on aging potential for a base Chianti Classico, but it is intended for enjoyment within 7-10 years, not the long-haul of Gran Selezione or Riserva. Vibrancy and primary character are at their best 2025-2029.

Food pairing

Ideal with Tuscan specialties: grilled pork or lamb, roast chicken, mushroom risotto, tomato-based pasta, aged pecorino, wild boar ragù, pizza with prosciutto.

Serving

Serving temperature
16-18°C / 61-64°F
Decant
Yes (30-45 minutes) — To soften youthful tannins and open expressive aromatics.

Sustainability

Sustainability score: 8/10

Integrated Pest Management, manual harvest, composting, reduction in chemical inputs, advances in water efficiency, cover cropping, solar panel installations. Packaging uses lightweight bottles to reduce carbon footprint.

Castello di Ama has been recognized for progressive adoption of sustainable and near-organic viticulture with ongoing transition to full certification. Estate practices minimize chemical use, emphasize biodiversity, and incorporate renewable energy. While not yet fully organic or biodynamic, the estate aligns with advanced sustainable farming and environmental stewardship. Light glass and local supply reduce packaging/transport impact. Strong sustainability ethos but not at the highest organic/biodynamic certification tier as of 2021.
