Tasting profile
Dense, tightly coiled red and black fruit (plum, dark cherry, cassis), Mediterranean herbs, smoked meat, graphite, black olive, peppery spice, subtle florals. Oak is integrated but present.
Evolution: Over next 5-10 years, tannins will soften, secondary notes of earth, leather, dried herbs, and sweet spice develop. Fruit becomes more complex, palate gains silky texture.
At peak: Fragrant, complex, harmonious blend of savoury and fruit, tertiary complexity (truffle, dried rose petal, cigar box), persistent finish.

Food pairing
Slow-cooked lamb shoulder, venison, North African spiced dishes, roast duck, hard cheeses, wild mushroom risotto.
Serving
- Decant
- Yes (30 minutes) — The wine has firm, powdery tannins that can benefit from aeration to soften and enhance the overall flavor profile. Decanting for a short period will help integrate the complex blend of varietals.
