Tasting profile
Notes of green apple, lemon zest, white flowers, and pronounced flinty minerality; lively acidity, subtle creaminess from lees, touch of saline/chalky finish
Evolution: Over 2-5 years, develops more hazelnut, honeycomb, and complex savory tones while retaining minerality; fruit becomes more baked/candied over time
At peak: Fullest expression of Chablis old-vine complexity, with harmonious integration of fruit, chalk, and gentle tertiary nutty aromas

- Current status
- Ready now, but will benefit from short-term aging
- Current condition
- Bright, fresh, and well-structured with crisp minerality; currently shows primary fruit and classic Chablis tension
Chablis Les Vénérables Vieilles Vignes is made from 35+ year-old vines, giving it greater concentration and mineral drive than entry-level Chablis. The 2023 vintage is regarded as fresh and classic, offering good acidity and balance. Its peak window (2026-2029) will see the wine shed its most primary citrus notes in favor of complex flinty, nutty, and honeyed secondary characteristics, while the backbone of acidity ensures freshness. After 2029, tertiary notes may dominate and the vibrant fruit may start to fade, though well-cellared bottles can remain enjoyable for another couple of years.
Food pairing
Classic pairings include oysters, clams, Dover sole, sea bass, roasted poultry with lemon or tarragon, sushi, or a cheese course with young goat cheese. As the wine evolves, it will suit richer seafood (monkfish, lobster), risotto with porcini, and matured Comté. Bright acidity and mineral grip cut through creamy or butter-based sauces.
