Tasting profile
Intense floral aromas (acacia, white blossom), ripe peaches, apricot, subtle citrus and fresh herbs. Slight volcanic minerality, lively acidity, clean finish.
Evolution: Fruit flavors soften over 2-3 years, developing hints of honey, marzipan, and toast if cellared. Acidity rounds out, florality diminishes.
At peak: At peak (2024-2025), highly aromatic, vibrant, fruit-forward with strong floral and mineral character.

Roma DOC Malvasia Puntinata expresses its most vivid aromatics and zesty character within a year or two of release. As the wine ages, primary fruit and floral notes decline, yielding to more muted, tertiary flavors and diminished freshness. Peak is thus the first 1-2 years post-release when freshness and aromatics are most pronounced.
Food pairing
Excellent with Roman-Jewish fried artichokes (carciofi alla giudia), grilled seafood, shellfish, fresh goat cheese, vegetable risotto, or light antipasti. As wine ages, it complements richer first courses such as pasta with cream sauces or baked white fish.

Sustainability
Sustainability score: 6/10
Integrated pest management; moves toward sustainability noted in Lazio but no official organic or biodynamic certification for this cuvée.
Principe Pallavicini emphasizes estate management and some sustainable practices but is not certified. Recent efforts in Lazio show positive trends but full eco-certifications are rare for the Roma DOC to date.
