Tasting profile
Primary dark fruits (blackcurrant, wild berry), cedar, graphite, and tobacco leaf flavors dominate; barrel toast and slight vanilla from French oak; bold, energetic tannins.
Evolution: Expect gradual softening of tannin and development of savory/tobacco/tertiary notes after 10+ years; herb, olive, dried rose, and sandalwood emerge over time. Sassicaia is famed for aromatic complexity with age.
At peak: Between 12 and 20 years post-vintage, layers of fruit, earth, spice, and mature leather/tar harmonize; the best bottles retain elegance for three decades or more.

- Alcohol
- 13-14% ABV (consistent with recent vintages, depending on final blend and vintage conditions).
- Aging potential
- Very Long (25-35+ years is typical for top vintages, given structure and estate pedigree).

- Optimal window
- 2028 to 2043
- Current status
- Too Young / In Barrel (2023 barrel sample if available); first anticipated drinking in 2027-2028
- Current condition
- Barrel sample phase or just bottled (no regular commercial release yet, but can project classic Sassicaia trajectory based on estate and region pedigree)
Sassicaia is crafted for long evolution, thanks to Cabernet-dominant blend, strict vineyard selection, and meticulous élevage. Even in less celebrated vintages, it rewards patience with aromatic and palate complexity. 2023 is not yet fully reviewed, but expectations are high, following the estate’s typical long-lived style.
Food pairing
Best with grilled or roasted lamb, Bistecca alla Fiorentina, aged Pecorino, venison, roast duck, mushroom risotto, or black truffle dishes. Its structure handles richly flavored, umami-laden cuisine.
Serving
- Serving temperature

Sustainability
Sustainability score: 6/10
Environmentally conscious farming (vineyard cover crops, minimal chemical input, native yeasts in some parcels, natural habitat preservation on estate, water efficiency); native vegetation corridors maintained; careful vineyard management to minimize erosion.
Tenuta San Guido follows sustainable viticultural practices and is a leader in environmental stewardship in Bolgheri, but does not have formal organic or biodynamic certification. Careful site management, biodiversity corridors, native scrubland and forest on estate all support ecosystem health. Inputs (such as chemical sprays) are minimized though not eliminated. Water use is relatively efficient for the region. Carbon footprint is moderate for a luxury export wine (heavy bottles, international shipping). Recent moves towards lighter packaging and renewable energy (like solar panels) are underway, but Sassicaia remains less overtly green than some certified-organic peers. Room for improvement still exists, especially in packaging and carbon offsets, but Sassicaia remains a sustainability leader among grand Italian estates that farm at scale.
