Mature Pauillac aromas: cigar box, blackcurrant, graphite, leather, woodland earth, dried violets, subtle cedar, tobacco; palate is full, structured, elegant, with integrated tannins and persistent finish.
Evolution: Primary cassis fruit has developed into complex secondary and tertiary notes; greater nuance, savor, and earthiness since youth.
At peak: Classic Pauillac: silky texture, superb balance, expressive bouquet; will show maximum complexity and finesse between now and early 2030s.

2000 was an outstanding vintage on the Left Bank. Pontet-Canet is a top Fifth Growth performing at Second Growth level since the 1990s, with organic and biodynamic viticulture enhancing terroir transparency. Bottles from good provenance will continue to improve through 2040, developing layered tertiary notes while retaining balance. Full maturity is present, but longevity remains excellent.
Food pairing
Traditional pairings: roast lamb, ribeye steak, beef Wellington, braised duck, wild mushrooms, truffle dishes, hard aged cheeses (Comté, Manchego). Classic French cuisine; avoid spicy or acidic sauces.

Sustainability
Sustainability score: 9/10
100% biodynamic farming; use of compost from estate livestock; cover crops; horse-drawn ploughing; rainwater collection; minimal intervention in cellar; recycled bottles and eco-friendly packaging; solar energy on site.
Château Pontet-Canet is recognized as one of Bordeaux's sustainability leaders, being the first Grand Cru Classé to convert fully to certified biodynamics and organic viticulture. Practices include soil regeneration, natural pest management, and minimizing chemicals. Energy and water use are carefully managed, and horses reduce soil compaction and CO2 output. Some emissions are unavoidable due to global exports, but the estate's overall environmental impact is among the lowest for luxury Bordeaux châteaux.
