Tasting profile
Intensely aromatic with notes of stone fruits (apricot, peach), orange marmalade, honey, dried figs, subtle spice (ginger, cardamom), and floral tones. Palate is lush yet lifted by vibrant acidity, with a silky, persistent finish.
Evolution: Over time, fresh fruit notes will give way to deeper, more concentrated dried fruits, candied citrus, caramel, butterscotch, and complex nutty nuances. Texture becomes even more unctuous with added viscosity.
At peak: A harmonious balance of intense dried fruit, honey, spices, integrated acidity, and a seamlessly creamy texture, with a hauntingly long finish and layered complexity.

Drinking window
- Peak drinking
- 2028 to 2054
- Optimal window
- 2025 to 2057
- Current status
- Ready to drink
- Current condition
- Vibrant, fresh, and beautifully balanced; showing primary and early secondary notes
The 2030-2040 window is considered peak as primary fruit is joined by mature honeyed and tertiary notes, while the wine retains definitive freshness from its naturally high acidity. This convergence results in maximum aromatic and textural complexity. After peak, fruit intensity gently recedes, while oxidative notes and caramelization may increase, gradually reducing vibrancy.
Food pairing
Classic pairings: tarte tatin, crème brûlée, blue cheeses (like Roquefort or Stilton), foie gras, almond tart, baklava, ginger-based desserts. At peak maturity, pair with richer nut-based desserts or savor as a dessert on its own. As the wine evolves, subterranean umami-rich or slightly salty foods (aged Comté, spiced nuts) will work exceptionally well.
