Tasting profile
Deep garnet with brick hues; expressive aromas of dried black cherry, plum compote, cigar box, leather, earth, and subtle vanilla and mocha. The palate is plush but complex, with sous-bois (forest floor), graphite, wild herbs, and integrated oak. Tannins silky and lingering.
Evolution: Primary fruit is giving way to secondary/tertiary flavors: balsamic, tea leaf, savory spices. Balance is at its peak, though more freshness than older vintages.
At peak: At absolute peak maturity now through ~2027, best bottles maintain poise to ~2030; will slowly dry out after 2030 but could show fascinating old-age complexity if impeccably cellared.

- 2015 to 2034
- Optimal window
- 2010 to 2037
- Current status
- Entering Late Peak; fully mature but holding strong
- Current condition
- Excellent condition if well stored; advanced tertiary complexity, deepest fruit may be receding but structure holds
2004 was an outstanding vintage in Ribera del Duero, offering both richness and structure. Flor de Pingus, though intended for earlier consumption than Pingus Grand Vin, is crafted with exceptional care (old-vine Tempranillo, high-quality oak, meticulous selection). Drinking window is extended beyond 'standard' Ribera due to vineyard age, method, and vintage quality. Mature examples from this period can hold for 23-26 years from vintage.
Food pairing
Roast lamb with herbs, aged Manchego or Idiazabal cheese, braised beef short ribs, wild game, mushroom or truffle risotto, and hearty Spanish stews.
Serving
- Serving temperature
- 16-18°C / 61-64°F
- Decant
- Yes (45-90 minutes) — Needed to awaken complex aromas and gently remove sediment; mature wine benefits from gentle aeration but should not be left exposed too long.
Sustainability
Sustainability score: 8/10
Flor de Pingus is produced from old, bush-trained Tempranillo vines, dry-farmed without herbicides or pesticides. Low-intervention, horse-plowed vineyards, native yeast fermentation, minimal chemical inputs, limited sulfur use, focus on biodiversity. Small production enables careful manual labor. Glass bottles are of moderate weight; no overt commitment to light glass or alternative packaging. Energy use typical of boutique producers; no stated use of renewable energy.
Dominio de Pingus and its 'Flor' bottling are widely recognized for organic practices and sustainable vineyard management. While formal certifications may be inconsistent vintage-to-vintage, Peter Sisseck’s approach centers on environmental stewardship, soil health, and minimal intervention. As a small estate, energy and water needs are low, and impact is further reduced by traditional, non-irrigated farming. Main sustainability limitations are lack of formal certifications for all lots and use of traditional packaging. Overall, one of the leaders in sustainable fine wine production in Ribera del Duero.
