Tasting profile
Aromatic nose dominated by candied citrus, apricot, saffron, honeycomb, light florals, and a whiff of noble rot. Palate is lush but balanced, with layered sweetness, mineral freshness, beeswax, pineapple and spice. Long, vibrant finish.
Evolution: Primary fruit has evolved into complex honeyed and dried fruit tones. Botrytis notes and tertiary characteristics emerging; acidity remains lively.
At peak: At or just past peak; further aging will soften freshness and shift toward more tertiary development.

- Current condition

This wine is crafted from grapes affected by noble rot (Botrytis cinerea), resulting in high natural concentration and significant ageworthiness. 2008 is regarded as an excellent, classically-structured vintage capable of lengthy evolution. At 16 years old, the wine is fully mature but retains enough freshness and structure to hold for several more years if carefully cellared.
Food pairing
Perfect with foie gras, blue cheeses (Gorgonzola, Roquefort), aged pecorino, fruit tarts, spiced cakes, or on its own as a contemplative dessert wine.

Sustainability
Sustainability score: 6/10
Marchesi Antinori employs sustainable viticulture: reduced pesticides, soil management, selective hand-harvesting, and water conservation at Castello della Sala. Newer projects feature solar panels, LED lighting, recycled packaging, and biodiversity corridors, though Muffato della Sala 2008 predates widespread adoption of many initiatives.
Marchesi Antinori is a historic estate making measured progress toward sustainability, especially in the last decade. While newer vintages benefit from advanced energy, water, and biodiversity practices, the 2008 Muffato della Sala was made before many of these initiatives were fully implemented. Its carbon footprint is typical of an Italian dessert wine exported globally—mitigated by some supply-chain improvements, but lacking organic/biocertification. Commitment to environmental responsibility is credible, but not at the leading edge for the 2008 vintage.
