Eszencia is one of the longest-lived wine styles—natural balanced acids and extreme sugar levels act as natural preservatives, supporting slow, complex evolution over decades. 2013 is an exceptional year with ripe botrytized Furmint and high concentration.

Food pairing

Best as a rare meditation wine. Pair with blue cheeses (Roquefort, Stilton), caramels, intense foie gras, or simply enjoy alone as a dessert course.

Sustainability

Sustainability score: 7/10

Soil management with sown cover crops for erosion control, significant reduction of synthetic inputs, focus on hand-harvesting and manual botrytis selection, traditional gravity-fed cellar, lightweight glass used for rare bottling.

While Disznókö is not certified organic or biodynamic, it uses modern sustainable practices — cover cropping, reduced chemicals, native yeast fermentations, and wildlife corridor maintenance. Bottling and logistics are mindful (light, small format bottles), but due to rarity and international shipping, the carbon footprint per bottle can be higher. Vineyard management aims for environmental resilience and soil health. Eszencia’s production methods (long fermentation, very low yields) are resource-intensive but have minimal additive or chemical inputs. Overall, careful farming, responsible production, and low chemical use yield a moderately high sustainability score.
