Tasting profile
Concentrated red and black cherry, raspberry, wild strawberry, subtle plum; underlying earthy, mineral (iron-rich, ferrous), and forest floor aromas. Savory spice (clove, sous-bois), discreet oak notes (toast, vanilla) integrated.
Evolution: Primary fruit is starting to meld into tertiary notes: truffle, game, dried rose petal, mushroom. Structure is polishing, tannins integrating.
At peak: At peak: harmonized bouquet of red and dark fruits, underbrush, stone, cured meat, sweet earth, gentle spice; long, elegant finish with silky texture.

- Approaching early maturity with promising integration and complexity
Dugat-Py's Vieilles Vignes cuvée is routinely one of the most structured and long-lived village wines from Gevrey, owing to old vines (50-90+ years), strict farming, and traditional élevage. As it approaches 6-10 years of age, the tannins soften, and complex, classical Gevrey aromas emerge, reaching optimal drinking maturity around 2026, with an additional decade of graceful evolution possible.
Food pairing
Roast duck with cherry sauce, beef bourguignon, game birds, mushroom risotto, truffled cheeses (Comté, aged Gruyère), wild boar, and rich poultry. Earthy, umami-driven pairings excel.

Sustainability
Sustainability score: 5/10
Dugat-Py employs lutte raisonnée (reasoned struggle), avoids herbicides, uses manual vineyard work, plows soils, and emphasizes vine longevity. Minimal intervention in cellar, low sulfur use, and gravity-fed processes. However, use of some synthetic treatments is possible, and packaging is standard (traditional; not lightweight).
While Dugat-Py practices prudent vine management (old vines, severe pruning for low yields, avoiding chemical shortcuts), there is no official environmental certification as of 2018, and lutte raisonnée does permit limited synthetic use. Manual labor, traditional cellar methods, and long-lived wines are positives, but packaging and export footprint are unexceptional for Burgundy. Notably, commitment to vine health and ecosystem is apparent but not maximized to organic or regenerative standards.
