Tasting profile
Pronounced aromas of blackcurrant, blackberry, plum, menthol, green pepper, cedar, and sweet spice. Palate is fresh and youthful with robust fruit, firm tannins, and lingering herbal-cedar notes.
Evolution: Fruit will become more integrated and nuanced, tannins will soften, tertiary notes of tobacco, leather, earth, and cedar will develop while primary fruit becomes less pronounced.
At peak: Wine shows harmonious balance of fruit, fine tannins, fresh acidity, and developed secondary/tertiary notes (cedar, earth, slight leather) without loss of vibrancy.
Structure
- Acidity
- Medium-plus, provides freshness and balance; supports moderate aging
- Tannins
- Medium to firm, ripe, slightly grippy; beginning to soften but still prominent
- Alcohol
- Moderate to high (typically ~14%), well integrated; no heat, supporting body and texture
- Aging potential
- 6–8 years from vintage
Drinking window
- Peak drinking
- 2026 to 2028
- Optimal window
- 2025 to 2030
- Current status
- Approachable now, but will benefit from short-term cellaring
- Current condition
- Youthful, vibrant fruit with firm tannins and energetic acidity
The optimal peak (2026–2028) balances the gradual integration of tannins and development of secondary flavors while the fruit remains vibrant. During this time, the wine expresses its greatest complexity and harmony. After peak, primary fruit recedes, tannins may dry out, and the wine gradually loses freshness, resulting in diminished enjoyment beyond 2030.
Food pairing
Pairs well with grilled or roast lamb, ribeye steak, beef short ribs, hard cheeses (Manchego, aged Cheddar), and dishes featuring peppercorn or mushroom sauces. At peak, works beautifully with richer dishes like duck breast with cherry sauce or herb-crusted pork loin. As it matures, pair with stews or braised meats to match developed earthy notes.
Serving
- Decant
- Yes (30 minutes) — The wine has medium to firm tannins that are beginning to soften, which can benefit from aeration to enhance its flavors and aromas.
