Tasting profile
Rich, vibrant aromas of lemon curd, yellow apple, ripe peach, honeycomb, and toasty new oak, with hints of hazelnut, crème brûlée, wet stone, and orange blossom. Palate is dense, layered, mouthcoating with a creamy texture, high glycerol, bright acidity and a long, slightly saline-mineral finish.
Evolution: Moves from exuberant fruit and new oak at release to deeper, more integrated flavors of almond, baked apple, butterscotch, roasted nuts, and complex flinty minerality with age. Develops a more savory and dense mid-palate after 5-8 years in bottle.
At peak: At peak, melds powerful fruit, tension, luxurious oak spice, and a saline mineral length. A superb demonstration of California Chardonnay depth and terroir.

- Very low (typical for Chardonnay; structure from oak)
- Alcohol
- High (typically 15.0-15.5%)

- Optimal window
- 2026 to 2038
- Current status
- Youthful and primary, cellar-worthy

- Very young, intense, structured; needs cellaring for peak complexity
Aubert’s Sonoma Coast Chardonnay, while approachable on release, is crafted in a very concentrated, barrel-fermented style built for aging. High acidity, ample dry extract, and top-class fruit quality mean it ages longer than typical California Chardonnay. Peak complexity is achieved 4-10 years after vintage, with an overall drinking window of 12-15 years in the best cellars.
Food pairing
Best with rich seafood (lobster, scallops, halibut), poultry in creamy sauces, roast chicken, veal, buttery mushroom dishes, or triple-cream cheeses such as Brillat-Savarin.
Serving
- Serving temperature
- 12-13°C / 54-56°F
- Decant
- Yes (30-45 minutes) — Young Aubert Chardonnays are tightly wound and benefit from aeration to soften oak and allow aromatics to open.
Sustainability
Sustainability score: 5/10
Aubert Wines employs many sustainable practices common to premium Sonoma producers: low-intervention viticulture, partial dry farming, on-site composting, cover cropping, and integrated pest management. However, there is no third-party sustainability or organic/biodynamic certification reported.
Aubert practices some sustainable vineyard management but is not certified by third-party environmental organizations. They avoid herbicides and use thoughtful viticulture but do not verify with an official sustainability, organic, or biodynamic label. Packaging is premium (heavy glass). Carbon footprint is better for US buyers. Overall, Aubert is typical of California luxury producers: some positive practices, but without the robust external validation or transparency achieved by top sustainable estates.
