Tasting profile
Lively citrus (lemon zest, green apple), subtle white flowers, fresh toast and almond notes from lees aging, very dry and mineral, with fine, persistent bubbles.
Evolution: Will lose some overt fruit and floral notes with time, gaining more pronounced autolytic aromas—brioche, hazelnut, baked bread, and a creamier texture.
At peak: Harmonious balance of vibrant acidity, well-integrated bubbles, delicate orchard fruit, and layered pastry-like complexity at peak.
Structure
- Acidity
- High; crisp and lively, providing both freshness and aging capacity
- Tannins
- None (as a sparkling white, with no oak/tannin influence)
- Alcohol
- Moderate (approx. 11.5-12% ABV), well integrated
- Aging potential
- 5-7 years from vintage due to quality base wine and traditional method aging
Drinking window
- Peak drinking
- 2024 to 2026
- Optimal window
- 2023 to 2028
- Current status
- Ready now; suitable for further aging
- Current condition
- Fresh, vibrant, and showing primary and early autolytic (lees-derived) character
The 2024-2026 window allows the wine to evolve past the youthful citrus briskness while retaining energy and integrating secondary notes (from lees and bottle aging) but before fruit fades or oxidative notes dominate. After peak, the wine may become more biscuity but lose freshness and detail.
Food pairing
Perfect with shellfish (oysters, clams, prawns), Jamón Ibérico, sushi, light tempura, ceviche, or mild goat cheese. As the wine evolves, it will pair beautifully with richer canapés, mushroom-based starters, or soft cheeses.
